Did you try actually unsubbing from each individual thread you're getting notifications for? As above, if you uncheck the 'send me emails' thing, it only applies to new content you interact with. You'll still keep getting notifications for threads you were being notified about before you unchecked it.

You can't. That's assigned automatically by the forum software based on your participation level. The only other way it changes is if it strikes the fancy of the mods/admin to make a custom one up for you, like Chooch has.

I am not sure if anyone else has this issue but when I type a post to this forum, the top row that includes the ability to attach photos, media, links, change font, etc. is whited out.

It's likely that you accidentally toggled the BB code (the bracket button) or the Preview button. Try clicking one of those, and everything should return.
