The Irishman
There were two books I read that weren't YA about Obi-Wan and Anakin... one was Rogue Planet, which was closer to TPM in time, and the other I forget the name but introduced Barriss and Luminara before AOTC came out. It's a big reason why Barriss is my favorite background Jedi... certainly not due to the movies. But I enjoyed both, and could see something set in that period being enjoyable too. I don't even need them to Rogue One is as far as butting RIGHT up against the movie that follows this story. but really, any master/apprentice pair (Dooku/Jinn, Jinn/Kenobi, Kenobi/Skywalker) could make for a cool series of planet hopping adventures and mysteries. Get some Jedi fix in, explore strange new worlds (I know that's already a show), fill in some lore, etc.
On the 'stuff I brought with me leading to preconceived notions ruining the movie' front, I remember seeing the trailer for TPM and immediately hoping for Qui-Gon and Obi-Wan to be more like William of Baskerville and Adso of Melk in Name of the Rose. And if I were magically named showrunner or this master/apprentice series, that's definitely something I'd emulate.
