I mean I think this is about as definitive as it gets for Spider-man figures

Yea, I'm the same. I don't hate cell shading, but it's not my preferred look. If I get to choose, no cell shading always wins.

I ended up customizing a Movie Quicksilver head for my unmasked Peter.
Mostly because i didn't like those heads. Why not use any of the unmasked heads that came with almost any previous Spidey? I think all of them from the past 7 to 8 years fit, or at least almost all of them do. I know the retro Peter heads fit, the animated one fits, the one from the Spidey/Kraven 2-pack fits, the one from the Spidey and Mary Jane Toys R Us 2-pack fits, and others I've forgotten fit because I've seen all of those tried in various reviews.
The Peter Parker head is OK once u get the glasses off, but is still a smidge large and also has those "Just saw Aunt May Naked" raised shocked eyebrows that kind of wreck it.
I like Ditkos art just fine, and if the head looked like the one you posted Id be down for sure, but this isnt what it looks like. You must not like Steve Ditko's art then, and I get that because I never liked it much for the first 30+ years of my life. I don't mind it now, but as a teenager I thought his style was too messy and exaggerated.
